Harvested between May and August, black summer truffles or tuber aestivum vitt have a black outer skin and hazel coloured flesh. Less pungent and more accessible than their winter counterparts, black summer truffles tend to be more affordable.
While their winter cousins tend to be very pungent, Summer truffles have a mild mushroomy taste that is better appreciated when paired with subtler flavours and shaved into paper thin slices atop pasta, risotto, eggs or canapés.
