Named after founder Gennaro Auricchio, the name Auricchio is synonymous with Provolone cheese. Since 1877, this family run company has been the gold standard when it comes to provolone.
Provolone is made from stretched curds that are molded into a pear or torpedo shape, then tied with rope and hung in an aging cave for 3 to 12 months. Provolone Piccante (sharp provolone) is aged for 12 months and has a sharper flavour and a firmer texture compared to Provolone Dolce.
SUGGESTED USE: Excellent as part of an antipasto course, paired with olives and red wine. Also delicious grated over pasta.
