Named after founder Gennaro Auricchio, the name Auricchio is synonymous with Provolone cheese. Since 1877, this family run company has been the gold standard when it comes to provolone.
Provolone is made from stretched curds that are molded into a pear or torpedo shape, then tied with rope and hung in an aging cave for 1 to 12 months. Auricchio Provolone Dolce (Mild Provolone) is matured for about a month to preserve all the delicacy of the milk.
SUGGESTED USE: Provolone Dolce is particularly suited for pizza, melted over meat dishes and sliced in toasted sandwiches.
